DOC (Denominazione di Origine Controllata) and DOCG (Denominazione di Origine Controllata e Garantita):
The status of DOC (Controlled Designation of Origin) and DOCG (Controlled and Guaranteed Designation of Origin) are reserved for wines of superior quality, with clear and distinctive characteristics: produced in delimited areas, with specific grape varieties, yields per hectare, cultivation systems and winemaking techniques defined by specific production regulations. These wines, before being put on the market, undergo quality controls carried out by special commissions that authorize the application of the recognition label on each bottle. DOCG regulations are more stringent than DOC regulations. For Prosecco there are protection consortiums as well as various certification bodies, which verify that the product meets all the requirements specified in the production regulations
Disgorgement (or dégorgement):
the process by which deposits are removed in the production of Classic Method sparkling wine; its date, if stated on the label, is indicative of the “life” of the sparkling wine because from then on the wine’s quality tends to decrease over time
